Moonsisters In the Kitchen: lawyer recipe by Cees Holtkamp

Jetteke loves advocaat. Whenever there is something to celebrate, she treats herself to an eggnog with whipped cream. Of course, she prefers to celebrate the best moments in life as often as possible ;-). Did you know that advocaat is a very Dutch recipe? Just like the version by Cees Holtkamp, which is also a true classic. For the first video of Moonsisters in the Kitchen, we went into the kitchen with the one and only Mr Holtkamp to make the tastiest advocaat in the country.

Lawyer of Cees Holtkamp

Cees Holtkamp is not only world-famous for his delectable tompoos, banana souffles and croquettes - we dare say we have a few extra pounds on our hips thanks to his delicious creations - but also for his lawyer and best oliebollen of the capital, about which more later. In our first Moonsisters in the Kitchen video, we make this classic recipe together with Mr Holtkamp, so that you can make it yourself at home. Nice for the holidays or as a sweet gift for a loved one, but actually good for any time of the year. Enjoy!

Avocado recipe

Cees Holtkamp was kind enough to share his secret recipe with us. You can read the instructions below. Want to make sure your eggnog is as good as Cees'? Then watch the video we shot with him.

Ingredients

  • 250 g egg yolks
  • 250 g sugar
  • Pulp of 1 vanilla pod
  • Knife tip of salt
  • 300 grams of brandy or vodka (we used vodka)

Supplies

  • Kitchen thermometer
  • Pan with boiling water
  • Heat-resistant dish
  • Garde
  • Glass bottle(s) with wide neck

Roadmap

  1. Put all ingredients in a bowl
  2. Heat the mixture with a whisk in a bain-marie* to 62 degrees Celsius
  3. Stir gently but thoroughly, taking the bottom and edges of the bowl with you.
  4. Keep this up for about 10 minutes and keep checking the temperature regularly.
  5. Place the bowl with the eggnog in a bowl of ice-cold water
  6. Stir now and then while you let it cool down, this takes a few minutes.
  7. Pour the eggnog through a sieve, so that any fibres remain behind
  8. Pour the advocaat into the glass bottles and allow it to cool further
  9. Keep the eggnog in the fridge for up to four weeks. The recipe is so good, we bet you won't need more than four weeks either ;-).

Surprisingly easy, right? If it doesn't work or if you accidentally made scrambled eggs, don't worry: at pastry shop Holtkamp, this fresh eggnog is sold by the bottle. Enjoy it!

*In this step, it is important to get the mixture exactly at this temperature. If it is too cold, you will get eggnog that is too thin. If the mixture is too hot, you will get scrambled eggs. Also delicious, but not what we are going for.
