Dutch doughnut recipe Cees Holtkamp

Ingredients
- 500 grams of milk
- 50 grams of yeast
- 1 egg
- 500 grams of flour
- 15 g grated lemon peel
- 50 grams of cream butter (melted)
- 10 grams of salt
- 250 grams sultanas, violently
- 150 grams of currants, forcibly
- 200 grams of diced apples (Jonagold)
- sunflower oil for frying
- icing sugar
Supplies
- Food processor or solid hand mixer
- Mixing bowl
- Kitchen scale
- Fryer or large pan
- Kitchen thermometer
How to do it
- Preheat the oven briefly, until it is around 30 degrees Celsius
- Warm 425 ml of the milk to about 38 degrees
- Dissolve the yeast in the lukewarm milk
- Stir in the egg
- Add the flour, then the lemon peel
- Knead everything well with the mixer
- Mix the batter smoothly
- Pour in the remaining milk
- Add the melted butter and the salt
- Knead with the mixer for another 15 minutes.
- Carefully mix in the sultanas, currants and apple
- Place the bowl of batter, covered with a damp tea towel, in the oven, which serves as a proving ground.
- Allow the batter to rise for 30 to 45 minutes
- Then mix the batter well and let it rest for another 3 minutes.
- heat a frying pan with sunflower oil to 180 degrees Celsius
- Using an ice cream scoop, scoop balls of batter into the oil until the pan is full.
- Deep-fry the oil balls for about 6 minutes, until they are golden brown. Note: if you have a small fryer, then 3 minutes may be sufficient.
- Drain the oil balls in a sieve or colander
- Sprinkle them with icing sugar and enjoy!
