Herewith we are happy to share the recipe of the most delicious Choco Soufflés(Moelleux au Chocolat) from our friend and two Michelin starred chef Hans van Wolde of restaurant Brut in Limburg. This dessert steals the show at any dinner party and believe us, anyone can make this. That video of the recipe is also on our Instagram @moonsisters.
What do you need?
-Steel round forms/baking tins or a small ceramic dish well greased with butter. Place them well apart on the baking tray so that they do not burn together.
- 180 grams of butter
- 180 grams dark chocolate
- 120 grams of sugar
- 90 grams of flour
- 5 fresh eggs
Step 1:
Once you have greased the moulds, melt the butter at low temperature in a pan until it is lukewarm. Then add the chocolate and let it dissolve in the butter, but make sure that the chocolate does not burn. The chocolate must remain lukewarm, so do not put it on too high a heat and keep stirring. Melt the butter to 'lip heat'.
Step 2:
Then beat all the eggs at once half-air in a food processor or with a hand mixer together with the sugar. For about 2 minutes until the batter is shiny.
Step 3:
Then add the flour to this batter through a sieve to prevent lumps and for proper distribution. Then spoon the flour through the batter. Then add the melted chocolate, do this very carefully while you keep stirring the batter.
Step 4:
Let the batter come to room temperature for about 2 hours by putting the container away, not in the fridge!
Step 5:
Add the batter to a piping bag and fill the molds to 3/4 with the batter.
Step 6:
Then they can go into the oven at 200 degrees for 8 to 12 minutes (depending on the size of the baking rings).
Step 7:
Let the cakes cool for a minute, cut the edges slightly so they come out easily and decorate them with a scoop of vanilla ice cream, red fruit or whatever you like.
