Moonsisters In the Kitchen - Dandelion jelly

Research has shown that the dandelion is actually gold and has great medicinal properties. It is nutritious and free too. You can mix the leaves of a dandelion with a meal. It is good for the liver, digestion, has a diuretic effect and strengthens your immune system. Below you can read step by step how to make Dandelion jelly. Delicious with a French cheese or in your tea. You can also watch the video on our Instagram @moonsisters of this recipe to see how you can make this jelly yourself.

What you need for 1 jar of jelly:

Dandelions (unsprayed and clean) about 15 pieces

1 organic orange

1 organic lemon

Jelly sugar (half the amount of jelly you want to make)

Step 1:

Pluck the yellow core of the dandelion from the stem into a pan. Add 3 slices of orange with peel and 2 slices of lemon with peel

Step 2:

Add water. The amount depends on the size of the jar. But keep to a full pot plus a little extra water because you will lose it through boiling and sieving.

Step 3:

Bring the water with the ingredients to the boil. As soon as it boils, turn off the heat and leave it covered for 24 hours (to infuse).

Step 4:

Then strain the water by pouring it through a tea towel and squeezing it.

Step 5

Then add the sugar to the remaining mixture (the amount of sugar is half of the mixture) and put it back on the fire. Then cook for 3 to 5 minutes. Pour off into a sterilised jar, screw on the lid and you're done!
