Moonsisters In the Kitchen - Asparagus by Hans van Wolde

Deep in the south in beautiful Limburg Lieke and Jetteke went to Brut 172, the restaurant of star chef Hans van Wolde, to prepare asparagus together. Read below how to prepare the most delicious asparagus, simple but so tasty. If you want to watch the video, you can do so via this link: 

 

What do you need?

-white asparagus 

-a knob of butter 

-1 litre of water 

-15 grams of salt

-10 grams of sugar 

-egg 

-olive oil 

-a little raw spinach 

-ham 

-chives capers 

 

Peel the asparagus, twice around. Let the liquid boil (the mixture of water, salt, sugar and butter) and then put the asparagus in it. 

Bring the liquid to the boil, then turn the heat down and cover the pan with a lid for 10 minutes. 

When the asparagus are almost cooked, let them cool in the liquid to make them even tastier. 

Meanwhile, prepare a steamed egg in the steamer, but poaching is also an option. 

Put on hot water and hang the egg in a form in the pan (for sale at a cookery shop). 

As soon as the asparagus are steamed, pour off the liquid into a new pan, let it thicken/boil for a few minutes. Then add the asparagus to this liquid again. 

Then let them cook in the liquid for a few more minutes. Save the liquid for later. 

Serve the asparagus left side up on the plate with some raw spinach, add a little olive oil to the liquid in the pan, add daschives capers, add the egg to the plate, pour some of the retained liquid from the pan over the asparagus and finally add a slice of ham.
