Recipe Gado Gado soup by Chef Elian Muller.
In the new episode of Moonsisters in the Kitchen we share the recipe of Fosbury & Son's fantastic Chef Elian Muller. Namely his delicious Gado Gado soup. Fresh, healthy and a twist from the traditional salad to soup. We are fans and of course had to share this with you. Hopefully you will all join us in cooking it. What do you need?
4 lime leaves
6 shallots
2 sereh stems
30 g ginger
3 cloves of garlic
½ stem of laos
300 g peanut
2 pcs red pepper
20 Gr of palm sugar
4 gr trassi
400 ml coconut cream
1 litre chicken stock fresh
1 dl soy sauce manis
2 tbsp tamarind
1 dl soy sauce
8 Gr salt
Step 1:
Make a boembu (spice mix) of the shallots, lime leaf, sereh, ginger, garlic, Laos and red pepper. Add the trassi and fry with it.
Step 2:
Put the peanuts in a food processor and grind until smooth, then add the palm sugar, tamarind, soy sauce, soy sauce and salt. Grind everything until smooth and add to the boembu.
Step 3:
Bring the stock and the coconut milk to the boil once and then add to the boembu. Cook it all together for another 5 minutes.
Step 4:
Then grind everything together again in the blender.
Step 5:
Blanch the vegetables a la minute and finish the dish with all the garnishes (see below).
As a final step, add some juice from a lime and salt to taste.

Mini pak choi
Green beans
fried Tempeh
Spitskool
Egg boiled for 8 min
Bean sprouts
Lemon
Kaffir lime rasp
Coriander
Chicken thighs stripped (substitute or omit for vegetarian option)
